Remember when you were a kid and had to stay home sick from school? The prospect of watching TV all day was mind boggling, until you realized there is NOTHING good on until dinner time and you were completely bored all day. What a mean trick for our nation’s children.
Ok, now multiply that boredom level times infinity and you wind up with Jim in his current post-appendectomy state. He actually went into work today, only to be promptly sent home to rest (thank you Jim’s boss). However, something different happened while he was home today, he started watching the Food Network. If you just heard chimes, you’re not alone.
I came home to an amazing concoction that was inspired by some episode of goodness he watched today. Here’s what I dissected to be the recipe:
• Take chicken breasts and flatten with a tenderizing mallet.
• Layer each piece of chicken with a slice of ham and a slice of havarti.
• Roll up and stabilize with toothpicks.
• Coat with honey mustard.
• Roll in breadcrumbs.
• Brown in saucepan for about 10 minutes.
• Cook in the oven at 350° for 10 to 15 minutes (depends on how thick the chicken is).
To accompany this I made:
Sauteed spinach – stick raw spinach leaves in a skillet with a quarter inch of water and cook on medium-low heat for five minutes.
Baked potatoes – added light sour cream, organic butter substitute, salt, pepper, shredded mozzarella and dried chives.
I know that a few weeks ago I posted a lengthy description on my disgust for meat. Well, it’s waning, as I knew it would. I’m still cheesed out by beef but am warming back up to chicken. It was only a matter of time.
